The title of this book may be "The I Love Trader Joe's College Cookbook," but I'll tell you, it's the perfect dinner-in-a-pinch solution for busy parents.
The book includes 150 easy, wholesome recipes, including:
- Chickpea Penne ("Easiest. Pasta. Ever.") - Roasted Chicken With Leeks and Apples (Less than an hour to the table.) - Meat Loaf Muffins (Need I say more?)
You'll also find quick vegetarian meals, snacks/appetizers (Thai Red Curry Deviled Eggs are on my list), special occasion meals, microwave meals for when you're really in a hurry (What kid wouldn't eat chicken parmesan strips?), and - YES! - desserts. I'm trying the three-ingredient Sunflower Seed Butter Cookies as soon as possible.
All of the recipes feature Trader Joe's products and generally involve no more than a handful of ingredients. The book, by food writer Andrea Lynn, is published by Ulysses Press.
