Q: Can I substitute fresh pumpkin in recipes that call for canned pumpkin?

Sure, you can substitute your own pumpkin. Just make sure you use a pumpkin intended for cooking, rather than a jack-o'-lantern style pumpkin.

Carving pumpkins tend to be big and fat, but have less flavor and are more fibrous.

Fresh pumpkin cooked from scratch tends to be more watery and less concentrated than canned. You might need to drain it before using.
