This week has been hands down so much better than last week. It's crazy how down on yourself you can get! I learned that the best remedy is just to move forward. Beating myself up for what I did and didn't do yesterday wasn't going to help me figure out what I was going to do the next day. So if I was upset about not working out yesterday, that just motivated me to do it the next day!

It probably helps too that it's my favorite season now :)

The time for field trips to the apple orchard and pumpkin patch is here! It's time to bring out the hoodies and scarves out, baby! Hot cider, warm apple pies and pumpkin anything is where it's at! Autumn is hands down the best season. It kills me that Jason and I couldn't have had a fall wedding what with all the leaves changing into vibrant colors, cool brisk weather, and don't even get me started on all the precious fall decorations that we could have done for centerpieces. :)

With fall comes glorious new recipes to try and more opportunities to work out outside, at least for me. With summer, you walk outside and you immediately start to sweat. By the end of the workout, you look like you have just survived a tsunami. Jogs around campus can only happen when the air is cool and there's an amazing breeze floating through. By now you know that I'm addicted to Pinterest. I wanted to share a couple of recipes to get you into the fall spirit. :)

Warning: Do not make this unless you're planning to share with a whole mess of people; I could easily eat this entire pan if I'm not careful :)

Pumpkin Cake with Cider Caramel Sauce

1 c. sugar
1 1/2 c. flour
1 1/2 tsp. baking powder
1 1/2 tsp. baking soda
1 1/2 tsp. cinnamon
1/2 tsp. salt
3/4 c. oil
1 (15 oz) can pumpkin
2 eggs

Combine the first 6 ingredients. Add oil, pumpkin and eggs. Whisk until blended. Pour into a greased 9x13 pan. Bake at 325 for 30 minutes. Cool and top with the sauce before serving.

Cider Caramel Sauce

1/2 c. brown sugar
1 Tbsp. cornstarch
2/3 c. apple cider
2 Tbsp. heavy cream
1 Tbsp. butter
salt to taste

In a saucepan, whisk brown sugar and cornstarch. Add cider and stir in the cream, butter and salt. Cook over med-hi heat, whisking constantly, until large bubbles form around the edge of the saucepan, about 3 minutes. Reduce heat to low and allow to thicken, about 2 minutes. Top with vanilla ice cream if you want and drizzle sauce over it.

Yum.

Fall Dip: Just cool Whip, vanilla pudding mix, and a can of pumpkin- doesn't get much simpler than this :)
