In the bad publicity is better than no publicity department: Tip o’ the hat to Don Yelton, the GOP official from Buncombe County whose “Daily Show” interview on Comedy Central went viral. Yelton resigned his post on Thursday.

Barbecued chicken quesadillas: For each, mix 1/2 cup shredded rotisserie chicken, 1/3 cup cheese, chopped onion and tablespoon barbecue sauce. Spread on flour tortilla and place in hot skillet. Cook until golden, flip and repeat. Side: melon slices.
Sausage and bean soup: In big pot, saute chopped onion in olive oil about 5 minutes; add minced garlic clove. Stir in pound of spicy, bulk sausage and brown. Drain. Add chopped carrots, celery and chicken broth (about 2 boxes). Simmer 15 minutes, add 2 cans drained, rinsed Northern beans. Season with salt and pepper. Biscuits, please.
Seafood tacos: Prepare according to instructions frozen fish sticks, popcorn shrimp or breaded fish nuggets, load into heated flour or corn tortillas with crunchy coleslaw, lime wedges and chopped cilantro. Side: Slices of melon sprinkled with cayenne. Tampa Bay Times
