Buttercream or cream cheese: This delectable frosting gets votes for the best tasting, but it does not stand up well in the heat. For a summer or outdoor wedding, you may want to consider other options.
Fondant: This icing is rolled out and applied to various tiers of cake. It holds up wonderfully in heat, in addition to having a crisp, clean look.
Gum paste or marzipan: Ever wonder what those gorgeous fruits, flowers and decorations on cakes are made from? These icings have a hard finish that allows them to keep their structure while also being edible, like a special candy.
