What’s Your Beef adds uptown location

Uptown shoppers will get a new meat source in early June when What’s Your Beef, the popular Ballantyne butcher shop, opens a new location in the 7th Street Public Market.

Vic Giroux, the owner of What’s Your Beef, says the new spot will be a second store and he has no plans to close his shop at 14021 Conlon Circle. The new location will replace Meat & Fish Co., one of the original vendors at the 7th Street market, 224 E. 7th St. Meat & Fish is moving to a different location.

What’s Your Beef, which originally was located in Waxhaw, specializes in custom-cut, pasture-raised beef, chicken, lamb and veal, including dry-aged Angus beef, as well as housemade sausages.

In the new location, Giroux says, he’ll still have those things, but he also will add cold and hot subs and hot dogs.

“Your meatball parm, your Italian subs,” Giroux said Thursday. “Nobody does those right.” In response to the uptown location’s traffic with people taking the Lynx line, which stops outside the market, he also plans to offer more “grab-and-cook” items, like marinated or rubbed meats.

Giroux plans to have the new location open June 2 or 3, but the market is going to celebrate this weekend with a “bacon galore” theme. Existing vendors like Orrman’s Cheese Shop, Pure Pizza, Local Loaf and Cloud 9 Confections will features bacon-centric dishes. The market also is planning a June 21 giveaway of a Char-Broil propane gas grill.
