When Susan Johnson’s sister visits from Phoenix, the Sherry Poached Chicken from the catering company Something Classic must be served.
“We have tried to figure out the recipe to no avail,” she says.
Interestingly enough, this recipe began as a hastily constructed dish to feed Something Classic’s first customer.
Jill Marcus, president of Something Classic, which is nearing its 25th anniversary, says it was made for her friend Robert Dulin.
“We didn’t have anything ready our first day and we ran in the back kitchen and threw this together. All we had was some diced chicken and artichoke Parmesan dip and some rice.
“We have come a long way since then!”
This casserole is total winter comfort food. Serve it with warm bread, a salad and a glass of wine.
