Stefan Huebner has been wowing and wooing Charlotte cocktail enthusiasts for more than 17 years. But recently has the New Jersey native had a chance to push the mixology envelop at—of all places—a brewery. “In 17 years behind the bar in this town, I’d say I’ve made 60,000 cosmos,” says Huebner, who was at Cosmos’ Ballantyne location before taking over the craft cocktail selection at NoDa’s Heist Brewery. “Charlotte just got liquor by the drink in 1980 so we’re still a toddler when it comes to drinking.” But Huebner has high hopes for the city’s spirits. His adventurous drinks feature top—and often locally-sourced—ingredients, and have quickly set Heist apart. Last month even saw the launch of his first 100% organic cocktail made with locally produced Lenny Boy Kombucha. “I think in two years every restaurant will have a craft cocktail list.”
