Atlanta-based popsicle company King of Pops has debuted in Charlotte just in time to cool down the city with hot ice pop flavors like Chocolate Sea Salt and Pineapple Habanero. Local mobile cart operator Neil Ringer makes every popsicle by hand, inventing flavors based on what produce is in season. “They range from fun and crazy to basic fruit pops, knowing that good ingredients make a good product,” says Ringer, who estimates the company has tried more than 250 flavors. This month, look out for a short-lived late spring ingredient: rhubarb. Check www.charlotte.kingofpops.net for cart locations.
