Chopt Creative Salad Co. is targeting Sept. 18 as a tentative opening date for its first Charlotte restaurant in the Park Road Shopping Center.
The opening’s been highly anticipated especially by East Coast transplants who regularly lunched on the Chopt’s made-to-order salads and wraps. This is the chain’s first shop outside of the New York and Washington D.C. regions.
A Chopt spokeswoman says the date is “likely to shift slightly” over the next few weeks. (Building permits and inspections tend to have that effect on opening dates.) It’s already shifted a bit — the chain had thought it’d be ready to open in late August or early September.
The restaurant has been hiring for and putting the finishing touches on its new location, 4201 Park Road Unit 70, near Harris Teeter.
Management of the New York-based salad chain has said they’d like to open several Chopt locations throughout North Carolina, including in Raleigh and Durham. Plans are even already underway to expand into uptown Charlotte, they say.
The company’s spokeswoman told the Observer that the Park Road Shopping Center site is the only location Chopt can currently discuss.
