Chef Michael Shortino plans to open Futo Buta at 11 a.m. May 16, with about half the menu, plus beer, wine, sake and more on hand. Beginning May 21, the whole menu will kick in.

Shortino, formerly with BAKU at SouthPark, plans plenty of ramen in this Japanese bistro, but emphasizes his intent for “authentic but not traditional.” So expect housemade ramen noodles, steamed buns and gyoza and Japanese fried chicken among the highlights.
