New breakfast place for south Charlotte

Greg Collier says he’s close to opening, at last, his second Yolk: It’ll be in Ayrsley (at South Tryon and I-485), next to the Wild Wing Cafe, and he plans what he calls “a relatively simple menu” with espresso drinks and weekend brunch specials.

Collier has quite the breakfast/lunch repertoire at his Yolk Cafe in Rock Hill; this one – which will be called either The Yolk @Dawn or just @Dawn, he says – will have a slimmer lineup. Think pancakes, porridge, five or six sandwiches and a handful of sides (his signature, specially-seasoned Tennessee fries and more).

He says he and Subrina, his wife, plan to have this open Wednesday-Sunday at first and see how business goes. Tentative opening date is March 1.
