A no-fuss pimento cheese

Q. I think it's time to revive the pimento cheese issue. Most of what's available today is no good. The worst is when it is spicy and hot. Do you have a good ol' Southern recipe for my favorite sandwich?

Oh, dear. Now, there's a controversial issue. Pimento cheese is highly subjective. One person's too spicy is another person's too bland.

Being born and raised in the South, I've seen everything from fancy versions made with white cheddar to cooked ones. Here's a version I spotted recently in a little publication put out by the C.F.
