It's nice to learn new names. Try “bobal,” a red Spanish grape that's mostly known for its inky color and its use in roses. Winemakers are starting to appreciate that it can do more. We can see why. Here, it's the dominant grape in a mix that includes tempranillo, garnacha and cabernet sauvignon. Put them together and you get toasty aromas, lots of body, a good balance of tannin and acidity, and flavors of cherry, chocolate and a little spicy pepper.
