The soup aisle has been getting fancier. Cartons of creamy butternut squash soup are sold in most stores, so we decided to use it as a base for a main-dish soup.
We love squash in soup, but on weeknights we don't have time to chop, roast and puree it. This product is an ideal solution. It's sold in specialty stores (including Trader Joe's) and many supermarkets.
We added flavored chicken sausage, orzo (any small pasta will work) and a few other mix-ins. A base like this lets you be creative.
