Sue Daly believes the mushroom and artichoke soup at Alton’s Kitchen & Cocktails in Cornelius is “divine.” I think the soup reminds me of cooler months to come.
Alton’s recommends serving 8-ounce portions of the soup, and I’d agree. It’s very rich. But the lemon juice and artichokes contribute a bit of acid to help maintain balance.
Once the soup cooled, I found myself musing about whether it would work as a base for a mushroom and spinach lasagna. It would definitely be worth a try.
