T-1 Tapas in Birkdale Village unveiled a new fall menu last week featuring butternut squash soup, a beer-and-maple-glazed Kobe beef burger from Strube Ranch in Texas on a European bun, and a walnut-encrusted chicken breast stuffed with herb goat cheese over sautéed spinach and quinoa with diced peppers and a light lemon walnut vinaigrette.
The seasonal fish on the menu is fresh N.C. grilled wahoo drizzled with blackberry cabernet sauce and served with creamy potatoes au gratin.
