The Meat Center, planned to open early next year in the Harbor Square building on Williamson Road, has hired noted Lake Norman chef Tim Schafer to work at the butcher shop and perhaps offer online blogs and lead cooking demonstrations.
Schafer owned the former fine-dining spot Tim Schafer's at the Lake in Sherrills Ford.
The Mooresville Board of Commissioners voted 5-0 earlier this month to give a permit to Florida-based Gryphon Development LLC to open the 2,900-square-foot store.
The Meat Center will sell top USDA-certified grades and as well as fresh seafood from the N.C. coast, owner Charlie Caputo told the board. All produce will be from local farms, he said.

Caputo and Gryphon Development representatives agreed to numerous concessions, including that no seating or tables be available to dine in, that no alcohol be consumed there and that all food be disposed of off site.
Caputo told the Observer recently that no opening date had been set and that it could be another three or four months before the shop opens.
