New Mexican eatery opens in Mooresville

The owners of Mooresville's landmark Prickly Pear gourmet Mexican restaurant branched out May 18 with the opening of Burrito Loco, a concept they intend to franchise.

Burrito Loco features tacos, burritos and quesadillas from $4.50 to $7.

Co-owner Val Panizzut calls the concept "fast and fresh." All orders are prepared fresh and are to the customer within minutes, he said. Eddie Chavez is the other co-owner.

Tacos at Burrito Loco include the signature Loco, which includes adobo steak, jack cheese, guacamole, pico de gallo, green onions, cotija cheese and chipotle crema; and the Carnitas, which has braised pork, avocado-cilantro sauce, tomatillo salsa, onion, cilantro and chicharrones.

The restaurant also serves two "Americano" selections, the chipotle burger and the Mexican dog, which is bacon-wrapped and includes refried beans, avocado salsa, lime mayo, onion and tomato.

Sides include the $1.50 Salsa Trio of roasted tomatillo, tomato-jalapeno and roasted tomato-arbol.

The same menu is served for lunch and dinner. A children's menu is available. The restaurant seats 40 to 50 and will soon add outdoor seating.

Iguana's Mex-Mex opens in downtown Concord

Iguana's Mex-Mex opened Wednesday at 87 McCachern Blvd. in downtown Concord.

Among other menu items, owners Tony and Karen Atilano serve "original fajitas," in which the meat and veggies are grilled just as they were prepared at the U.S.-Mexico border years ago.

The restaurant features a large family dining room and smaller private spaces.

Hours are 11 a.m.-9 p.m. Mondays-Thursdays; 11 a.m.-10 p.m. Fridays-Saturdays; and 11:45 a.m.-8 p.m. Sundays.
