New healthy fast-casual concept Verde opens in Ballantyne this month with salads, grain bowls, juices and more

Ballantyne is about to get more healthy salads, grain bowls wraps and freshly pressed juices this month when fast-casual concept Verde opens at 15105-F John J. Delaney Dr. This is the first North Carolina location of the restaurant (and fifth overall), which was started up in Charleston, S.C. in 2011 by Sam and Jennifer Ferrebee.

“We pack our menu with nutrient-dense foods for the health-conscious and taste-conscious alike,” Jennifer said in a press release. “We’re excited to expand further into the Carolinas and be a go-to spot when people are craving a delicious and healthy meal—fast.”

The Instagram account is bright with salad-filled images that show a similarity to Chopt Creative Salad Co. (salad lovers, rejoice!), and the menu is packed with signature items that can be chopped, tossed or wrapped.

Customers can also expect seasonal and regionally-sourced ingredients, and a business model that supports food donations in the community. The south Charlotte location will provide dine-in, take-out, online ordering, and catering options.

Let’s take a peek at the menu:

Signature creations (served chopped, tossed or wrapped) include the Southern Harvest (with mesclun, roasted chicken, pecans, apples and cornbread croutons with sweet tea vinaigrette) and the Mesa Verde (with romaine, roasted chicken, red onion, grape tomatoes, corn, avocado, black beans, cilantro, tortilla strips and chipotle lime vinaigrette).

Create your own options allow for a bowl, salad or wrap, and build on a variety of bases (like kale, arugula and wild rice), proteins (like falafel, roasted turkey and bacon), toppings (like corn, chickpeas and edamame), seasonal toppings (like mango and roasted poblano peppers), cheeses and dressings (hello, agave mustard).

Housemade soups include a refreshing tomato gazpacho choice, as well as summer vegetable.

Cold pressed juices will be on a seasonal rotation, with fun flavors like Pearway to Heaven (with pear, cucumber, apple, spinach and lemon) and Dropping Beets (with orange, beets, apple and ginger).
