Expect small bites, craft cocktails when this new restaurant opens in Mooresville
A new concept from the owners behind several of Lake Norman’s Latin restaurants is in the works in Mooresville.
Paloma is expected to open early next year in the Williamson Road space formerly occupied Sabor Latin Grill.
Owners Valentino Panizzut and Heriberto Chavez are still working on the permitting process for renovations, but have plenty of restaurant experience to set them on track. They own Havana 33 Cuban restaurant and Burrito Loco in Mooresville, along with sister concept Juan Loco in Cornelius and Verde in Huntersville.
But you won’t see many similarities, other than a Latin influence.
“It will be totally different,” Panizzut said. “We also used to own a restaurant called the Prickly Pear that closed during the pandemic. There might be a few things on the menu that pay homage there.”
At Paloma, “We’re calling it small bites and craft cocktails with a Latin flair,” he said. “We could be doing sushi — probably sushi — seafood, fried calamari.”
The menu is still in the works, under the direction of chef Hector Abraham Mendez, who’s from the Dominican Republic and has worked in New York City restaurants. His background and experience will be incorporated.
In the dining room and at the bar, expect specialty cocktails from mixologist Ramon Acevedo, created with craft-made syrups. You’ll likely find mules, old fashioneds, martinis and even a few tiki cocktails, Panizzut said.
