8 of the best croissants in Charlotte
Sorry kids, you’ve been sold a lie — France is not responsible for creating the croissant. It turns out we have been thanking the wrong country for these buttery, moon-shaped baked goods. Vienna, Austria, actually deserves the credit.
It’s been written about in many places, including ”Smithsonian Magazine.” Legend goes, in 1683 a Viennese baker who was up early to make bread heard the Turks tunneling under the city, preparing to attack. He sounded the alarm, allowing the military to collapse the tunnel and ultimately save the city.
To celebrate the victory, Austrian bakers created a treat called the kipfel — the German word for crescent. It was said to represent the crescent moon on the Ottoman flag and became symbolic of the Austrians “eating their enemy.” Centuries later, the French would refine the treat by using puff pastry.
