5 delectable side dishes in town to celebrate National Eat Your Vegetables Day tomorrow

Saturday, June 17 is National Eat Your Vegetables Day. Aggressive, right? It’s like the whole nation is telling you that you can’t leave the table without eating your broccoli.

The Charlotte Regional Farmers Market is making it a little easier for Charlotteans to celebrate with vendors passing out free vegetable-filled recipes that day. The market is open 8 a.m.-2 p.m. at 1801 Yorkmont Road.

Still too much to handle?

These five delectable side dishes should do the trick if you plan to eat out:

(1) Mexican Street Corn at Babalu

Creamy. Spicy. Salty. Perhaps paired with the seasonal watermelon margarita. 1511 East Blvd.

(2) Cauliflower rice at Living Kitchen
