This Charlotte chicken favorite is rolling out new menu items — with steak

Some people can eat the same things all the time and never get tired of them. We are not those people. And Viva Chicken is about to help us out with that problem, bringing three new choices to its menu for a limited time.

WHAT: The three steak-focused, Asian-inspired additions are Lomo Saltado, Wow Lomito and Chinito Saltado.

WHEN: Nov. 8-Dec. 14

WHY: Chef Bruno Machiavello, Viva Chicken’s co-founder, designed all three dishes to showcase the Asian influences found in his native Peruvian cuisine and meet customers’ demand for steak options.

“Pollo a la Brasa will always be our signature item, but we hear from guests all the time: ‘We love to Lomo Saltado,’ or ‘the Wow Lomito is my favorite sandwich,’ so we wanted to bring both of those back for our loyal customers,” Machiavello said.

DETAILS:

The Lomo Saltado (formerly known as the classic Saltado) is marinated sirloin, onions, tomatoes and cilantro, served over Jasmine rice and French fries, which are the customary accompaniments in Peru ($15.25).

The Wow Lomito (shown above) is a sandwich packed with marinated steak, sauteed onion, tomatoes and rocoto mayo on a warm and toasted ciabatta roll ($12.95).

The Chinito Saltado is a Chifa-style stirfry dish with sirloin, onions, tomato and herbs atop French fries and Viva’s signature arroz chuafa, which is Peruvian fried rice with red peppers, green onions, eggs, ginger and soy sauce ($15.25).

“All three of these items take me back to my childhood in Peru. Our cuisine is heavily influenced by Asian cooking, and these dishes highlight those flavors, which you can find every day on the streets of Peru,” Machiavello said.
