Fast-casual poké spot heading to Madison Park, with build-your own Hawaiian poké bowls
Koibito Poké, an Arizona-based fast-casual restaurant that features build-your-own Hawaiian poké bowls, will open in the Madison Park neighborhood of Charlotte in July 2022.
The restaurant currently has four locations (all in Arizona) and is focused on healthy ingredients in the fast-casual dining space. You can even customize your macros before you order.
It will be located at the corner of Park Road and Mockingbird Lane, in the same building with Waterbean Coffee and Vintage Nail Bar.
MENU ITEMS: In addition to BYO Bowls, the restaurant has four signature bowls you can order:
- The First Timer Bowl: Hawaiian tuna, house sauce, cucumber, edamame, green onion, pineapple, crab mix and sesame seeds on rice or mixed greens.
- Chicken & Shrimp Bowl: Shrimp and chicken mixed in Sriracha aioli and Champagne butter. Topped with cucumber, edamame, red onion, shaved Brussels sprouts, cilantro and crispy onion on rice or mixed greens.
Tuna Trio Bowl: Spicy tuna, Hawaiian tuna and regular tuna mixed in sweet chili lime sauce. Topped with edamame, cucumber, red onion, pineapple, sesame seeds, and masago on rice or mixed greens.
Koibito Bowl: Salmon, Hawaiian tuna and regular tuna mixed in Sriracha aioli. Topped with cilantro, edamame, cucumber, seaweed salad and sesame seeds on rice or mixed greens.
