Chapter 6 opens today, featuring Mediterranean flavors along Charlotte’s Rail Trail

Chapter 6, a small plates restaurant focusing on Western Mediterranean flavors that is overlooking the Rail Trail, is opening today at the Line in South End.

The sixth restaurant in Jon and Kim Dressler’s Rare Roots Hospitality group will showcase the tastes and traditions of the coasts and fields of Spain, Morocco, Algeria, Tunisia, France and Italy with daily dinners starting at 4 p.m. and brunch on the weekends from 11 a.m.-3 p.m.

“We are very happy with the space, the menu, and the hospitality we’ll bring to the area,” owner Jon Dressler said.

The food: Expect small plates and large plates with shareable entrees, and prominent flavors of herbs and spices; basil, garlic, mint, Calabrian chiles. Menu highlights include Whipped Ricotta, Tuna Crudo, Sherry Braised Pork Cheek, Mussels & Clams, Braised Lamb Neck, and larger format dishes like the Seafood Feast meant for four guests.

Operations director Tim Buchanan, along with Rare Roots chefs Scott Hollingsworth and Jonathan Cox, traveled to Spain and Morocco to research, explore and refine the menu.

“It could be Spain one day, could be Moroccan the next. It gives the chef an opportunity to highlight what he likes to do and local flavors according to what the farmers have in season,” Jon Dressler previously told CharlotteFive.

You’ll also see a familiar feature. “The Treatment,” a multi-course tasting at sister concept Fin & Fino that includes a $5 donation to a local nonprofit, will appear at Chapter 6, as well.

The drinks: Brittany Kellum, bar manager at seafood-focused Fin & Fino, will create the cocktail menu with a focus on Western Mediterranean flavors, as well. Hilary Demitt will head up Chapter 6’s wine program with varietals from the region, such as Moroccan Syrahs and Spanish Riojas.

The space: The 6,600-square-foot restaurant will offer seating for 260 guests — including space at a bar and lounge and out on the 80-seat patio — and roll-up garage doors will allow for an indoor-outdoor feel when weather allows.

The Line at South End includes office space with a sky lobby, and Sycamore Brewing anchoring the ground floor, including space for its Beach Shack Coffee bar. Other tenants include Grit Box Fitness and Savi Provisions, an Atlanta-based organic food market selling wine and beer, cheese and charcuterie, along with baked goods and other staples.
