A New York-style bagel shop is coming to South Charlotte’s Carmel Village

The sign’s up and it’s official: New York Old School Bagel & Deli will open later this spring at Carmel Village in South Charlotte.

Owner Mark Stordeur, a native New Yorker, promises his shop will serve freshly made bagels just like the ones found in the Empire State.

“I’m looking forward to sharing the comfort foods from New York with my neighbors in Charlotte,” Stordeur told CharlotteFive.

And just what makes the New York bagel special?

In the past, Stordeur said, New York bagel makers attributed their bagels’ signature taste and texture to the water, which often had lower concentrations of calcium and magnesium. But these days, with more unified municipality regulations, the difference lies in how the bagels are made.

New York-style bagels are always kettle-boiled in water for a couple of minutes before they’re baked, which helps make a crackly crust on the outside and a warm, soft inside, Stordeur said.

“Lots of other bagel shops take shortcuts by steaming the bagels or even buying them pre-made,” Stordeur said. “I’ll be onsite every morning making bagels from scratch.”

Stordeur, an entrepreneur who moved to Charlotte about two years ago, came up with his shop’s name and logo himself. It was important to have the “old school” authenticity and full New York experience, so he worked closely with mentor Robert Goldberg, who owns about 40 shops in New York, to learn family recipes, ingredients and other tips to help ensure success.

The shop will offer the full spectrum of bagels, including plain, sesame, blueberry, garlic and onion, along with seasonal specials, with fillers to include bacon, sausage, deli meats, lox and cream cheese spreads. New York hard roll sandwiches will be served at lunchtime, and cold cuts can be purchased by the pound.

The store is still about eight weeks from opening and has a “coming soon” sign out front. But that’s not stopping curious potential customers from stopping by to ask about opening plans. Stordeur anticipates his shop will be warmly welcomed by neighboring businesses and communities.

“I’m not the first bagel place here in Charlotte, but I know there’s room for more and people are craving it,” Storduer said. “I know within my heart that I’m giving you the same type of product you can find in New York.”
