Behind Copperhead Social, a cozy little bar in NoDa where Brevard meets North Davidson, sits a nondescript food truck. It’s there that Alex Beebe makes Charlotte’s best burger.

Beebe and his business partner, Julian Billings, didn’t set out to create a burger destination. They just wanted a bar.

The two had run Pepperbox Donuts out of the same house, and when that closed, the space was already in their hands.

“It kind of dawned on us that we needed a space,” Billings said. “So why not take one we already have?”

Copperhead Social feels like hanging out in a friend’s cool house — Christmas lights strung across the ceiling, Star Wars memorabilia scattered around, even a Super Nintendo in the back.

It’s unpretentious, relaxed, and built for long nights. The food was never meant to be a side note.

“Our specials are the junk you want to eat when you’re eight beers deep,” Billings said. That includes Frito pie and a hot dog stuffed with cream cheese.

And then, there’s the burger.

100 burgers a night on the weekends

Beebe was born and raised in Charlotte and has worked in local kitchens since he was 16. He treated the burger recipe like any chef would — testing and tweaking until he landed on the formula: an 80/20 ground beef blend, smashed into thin patties that crisp up on the flat-top.

On weekends, he cranks out more than 100 a night. The burger has already sparked legends.

One customer wrote a Google review that nearly gave Beebe and Billings a heart attack.

She was told it was one of the best burgers in Charlotte. After trying it, she wrote: “Sorry, I have to disagree.” Beebe and Billings braced themselves. Then came the twist: “They’re not the best in Charlotte. They’re the best I’ve ever had.”

Science can explain why this burger is so damn good. Math, too, I suspect.

Beebe smashes each loose-packed ball of beef flat, creating maximum surface area for the Maillard reaction — the alchemy that turns meat dark, crisp and irresistible. It’s a skill that Beebe could take to the bank.

Two patties, cheese, mayo, veg and a Hawaiian bun complete the equation, a kind of burger Golden Ratio the likes of which are found in plants, snowflakes, cosmic distances and the Pyramids of Giza.

Order one and close your eyes, and you may even see the Vitruvian Man flapping away in your mind between bites — for this burger is not only a feat of advanced burger engineering, but also one of art.

But the beauty is that you don’t have to think hard about any of that. You only have to decide which burger to get. There’s the “Copperhead” ($12) with cheese, onion, lettuce, pickled banana peppers and a special sauce. There’s the “Green Chile” with queso fresco, roasted green chilies and cilantro mayo ($13). And there’s also a version with pastrami on top for $11.

Do you want fries? There are fries to pair with each of the burgers, sharing the same toppings. Even a poutine-inspired version. In other words, they are not vegan- or even veg-friendly, but there are basic fries with sea salt or BBQ seasoning, and sometimes basic is best.

Just like the burger. The basic “LTO,” named for the simple lettuce, onion and tomato accoutrements, and it’s $10. When your name is called, don’t waste time. Grab it, and just eat. Quickly. This burger is exhilarating yet familiar, indulgent yet comforting — the flavor, redolent of nostalgia, pressed flat on a grill.

And it all comes from a blink-and-you’ll-miss-it white truck parked behind a bar, its only signage promising “Smash Burgers, Wings, Fries and More.”

With it, Beebe — the “burger truck dude,” as Billings calls him — has quietly made Copperhead Social more than just a neighborhood bar. Alongside Brooks Sandwich House and The Goodyear House, he’s turned NoDa into the center of Charlotte’s burger universe.
