Scoop: Champagne, caviar will come together in an elite Michelin collab in Charlotte

An exclusive, trans-Atlantic collaboration between Michelin-starred restaurants celebrating champagne and caviar is coming to Charlotte this fall.

In October, Counter- — the only Charlotte restaurant to earn a Michelin star in the inaugural Michelin Guide American South — is teaming up with two-starred London restaurant Kitchen Table for a 10-14 course dinner highlighting luxury ingredients.

The star of the show? Rare, grower-crafted champagnes and caviar from North Carolina’s Marshallberg Farms.

“It’s going to be a really beautiful play on caviar and champagne, but showcasing that we have very similar mindsets in food and technique,” Counter- executive chef and owner Sam Hart told CharlotteFive in an exclusive interview.

Only 12 spots will be available at each seating Oct. 27-28, with an all-inclusive $1,505 price tag to cover the product costs.

“It’s going to be a very fun, very unique dining experience where we are going to have probably too much fun with the iconic pairings that people normally see with caviar and champagne,” said Hart, who’s also taking Counter- on the road to the Big Sky Food & Wine Festival in Montana on Sept. 25-26.

What to expect

Kitchen Table chef James Knappett and sommelier Sandia Chang — a husband-and-wife team — are known for creating an interactive experience similar to what Counter- diners are familiar with.

Each of the restaurants source local, forage and shift menus seasonally to hone in on beautiful ingredients, creating dinners where the kitchen staff leads guests through the menu.

“We are outrageously excited about working with the two of them,” Hart said.

Menu planning is still underway, but a few things diners are likely to see include a dish called “Big Ass Caviar French Fry” that Hart said “will for sure be on the menu,” along with fried chicken with caviar and champagne.

“It’s the ultimate trio, so that will definitely be there, too,” Hart added.

Even dessert will feature caviar, with a caviar banana cream pie making an appearance.

“I’m still pinching myself,” Hart said. “I’m physically pinching myself right now, because I still don’t believe that it’s happening, but I’m so grateful that it is.”
