A Peruvian restaurant is opening in south Charlotte this summer with ceviche, rotisserie chicken and more

If you love ceviche, south Charlotte may be calling your name soon. Saltao Peruvian Fare will open this summer at 7741 Colony Road in the space formerly occupied by Mexican restaurant Maria Bonita, according to a release.

The name Saltao gives a nod to saltado, a popular Peruvian dish featuring a stir fry of marinated sirloin or chicken with onions, tomatoes, French fries and other ingredients. It’s usually served with rice.

Owner Raul Penaherrera seeks to bring a piece of culinary history and a variety of dishes from Lima, Peru to the space in south Charlotte, with a menu boasting authentic ceviches, rotisserie chicken and other elements of Peruvian cuisine.

Penaherrera, an immigrant from Lima, arrived in the U.S. about 20 years ago to work as a chef in Miami, Fla. He moved to North Carolina to follow family and business opportunities.

The vision behind his new concept, Saltao, is to serve Peruvian cuisine with a modern touch as it is experienced in larger cities like Miami. The space boasts high ceilings and a patio — perfect for sipping some of Peru’s most popular drinks like Pisco and Algarrobina.
