Answers to all your questions about Salud Cerveceria now that FuD is closing

A lot has happened over at Salud Cerveceria in the past 24 hours. Here’s a quick breakdown of what happened and what is in the works in the space located at 3306 N Davidson St.

Jan. 10: FuD at Salud announced they would be closing Feb. 5. Owner Jeff McElwee, will be running the food menu and kitchen at Uptown’s newest coffee shop, Queen City Grounds. He is also working toward mobilizing a food truck.

Jan. 11: Salud Cerveceria, owned by Jason and Dairelyn Glunt, announced their plans since Jeff’s announcement.

“We’re not closing,” said Jason Glunt. “Also, there’s no drama between us, Jeff and I. We’re excited to both grow from this.”

In addition to Queen City Grounds I will be working on getting a food truck going, aptly named the FūD Truck. Remember all of those waffle cones we’ve been doing? That has all been delicious research and development for a mobile operation. I cannot even begin to express my gratitude to each and everyone that has supported us. The joy of getting to meet and feed so many friends is something I cannot even put into words. Being a part of the NoDa community is one of the coolest things I’ve gotten to experience. Don’t worry, you’ll still be able to find me at Sanctuary or Growlers so feel free to join me for a beer! A huge thanks to Jason and the rest of the crew at Salud. Jason took it on faith that I would know what I’m doing and luckily I was able to figure that out. Stay tuned with Salud to see what they’ll be cooking up! Remember, we’re not going away, we’re just moving on up to the big city! Well, two miles away. There may not be a Point Break poster gracing the walls of QCG but I can guarantee you that the menu will be just as fun, weird and delicious as what you’ve come to expect from FūD. So what’s next for Salud Cerveceria?

“We’re going to take over the FuD kitchen,” said Glunt. “Basically, our business is going to be a brew pub.”

What’s the new menu going to be like?

“We’ll have a more well-rounded menu for lunch and dinner,” said Glunt. “The main piece of equipment will be a wood-fired pizza oven.”

Patrons can expect to dine on Neapolitan style wood-fired pizza. “We think it’s a natural fit with pairing pizza and beer together,” said Glunt. “Pizza is something people can eat both for lunch and dinner.”

Salud Cerveceria will also have a big charcuterie program, salads and other items including open faced sandwiches for lunch. Breakfast and expanded lunch hours are also in the works as well as the set menu.

Speaking of breakfast, Trade and Lore (located inside Salud Cerveceria) will plan on having a breakfast menu in the upcoming months.

We want to start off by thanking Jeff and @fudatsalud for the past three years of partnership and great food. We wish them the best of luck in their new venture. With any change comes opportunity, and we are ready and excited to take advantage of the departure of Fud. We will be making some big changes to the food we serve at both the bottle shop and at our upstairs brewery. Over the next few months we will be adding some new equipment to our kitchen, including a wood burning pizza oven. Our new menu will focus on seasonal ingredients from local farms and producers. While pizza will take up a significant portion of the menu, we will be leaving space for salads, charcuterie and varying specials that will reflect our new vision. Breakfast and expanded lunch hours are also in the works. During the short few months of construction we will be working on providing alternative dining options to keep our full experience in effect. When can we expect construction to begin and end?

“Jeff’s last day is February 4, so construction will begin on the 5th,” said Glunt. “We hope to have everything completed if it all goes well by mid-May.”

Don’t worry though, Salud Cerveceria and Salud Beer Shop will be open the entire time.

If you’re looking to order food during the construction period, you’ll be able to order from any of the surrounding NoDa restaurants. Glunt also mentioned that he’s hoping to work out something with Sabor (which his wife’s brother owns).

Who is taking over the kitchen?

Tedd Spickler, who actually contacted Jason a few months ago looking to help out in any way. Luckily, Glunt was looking for a new chef. Good timing, Spickler.

Are the waffle sandwiches gone for good?

Yes.

Glunt said they’ll also plan on doing Wine Down Wednesdays with baked oysters and Tostada Thursdays.
