New South End space will be a brewery/cafe/coffee/fermentation lab all in one

What won’t be going on in Hyde Brewing when it opens in July on Griffith Street?

Not much: Besides the location of the innovative brewery and its roommate, Hyde Coffee, it will also have a restaurant, The Suffolk Punch, and a fermentation lab for future creations.

The Suffolk Punch will be a drinking and dining space with a taphouse, coffee bar and cafe, according to Lisa Wendling of The Plaid Penguin, which also will be located in the new space.

The space at 2911 Griffith Street is large, but now it’s drawing in other buildings in the same area, aiming to be “a collective campus for craftspeople.” Wendling says each area will be clearly defined when you go in: Coffee bar in one area, run by “coffee whisperer” Lindsey Pittman, brewing area in another, run by founding member Dan Hyde. And in the center, in an elevated space, will be a fermentation lab for working on new creations for both the beer and the food.

The Suffolk Punch is named after work horses in Suffolk County, England, where Hyde’s family originated. That will be 8,000 square feet at the New Bern light-rail station, with room for 300 seats, a bar, outdoor seating and entertainment space. The restaurant will serve Hyde Brewing creations in the beginning, before it expands distribution.

The Hyde Brewing team and the Suffolk Punch will work together on produce preservation and developing specialty yeast strains to use in the brewing, cooking and roasting.

“Our decision to seperate customer experience and production into two entities gives us flexibility to develop and grow The Suffolk Punch and Hyde Brewing both here in Charlotte and beyond,” said Dan Hyde.
