Fresh everyday? How do they do that?

When Jim Seidel moved to Charlotte, he assumed being on the East Coast meant fresh fish every day.

Wrong.

Big chain grocery stores have a hard time bringing in large quantities of fresh fish, and thus rarely offer it. Carolina Fish Market deals in small quantities.

“We may run out of something but it’s coming back tomorrow morning, fresh and brand new,” Jim says.

The market only hires local boat captains off the Carolina coast who know best where and how to catch the most sought-after seafood and fish.

Can I microwave fish?
