Popular Charlotte-based pizzeria opens new Huntersville location
The Charlotte pizza restaurant that was so popular it grew into a regional chain has grown some more — Brixx Pizza has opened in its new Huntersville spot.
The local favorite since 1998 has opened at its new and bigger Birkdale Village location, the shopping center announced via email on Wednesday, May 17. The pizzeria is across from Regal Birkdale — perfect if you want to grab a pie and a craft beer before a movie.
Brixx boasts an inventive menu with something for all tastes and dietary needs — including vegan, vegetarian and gluten free. “From Day 1, we were committed to being vegetarian and vegan friendly,” founding partner Jeff Van Dyke told CharlotteFive last year. “We’ve always had vegan cheese, and now we offer two types of gluten-free crust. One of our most popular crusts is the cauliflower crust.”
The pizzeria’s signature pie is the Bronx Bomber, with spicy Italian sausage, prosciutto, mozzarella and gorgonzola on tomato sauce topped with fresh oregano.
Several other changes have been announced at Birkdale Village lately, including:
- The closure of popular Girl Tribe spinoff retailer Girl Supply.
- New retailers are expected to open this year, including Anthropologie, Warby Parker and a few others.
- Other local restaurants are opening at Birkdale as well.
