A new fast-casual poké spot is officially opening soon in South Charlotte

A new poké restaurant is finally opening its doors in Charlotte.

Koibito Poké, an Arizona-based restaurant featuring build-your-own poké bowls influenced by traditional Hawaiian and Japanese flavors and fresh ingredients, is officially opening in the Madison Park neighborhood next week.

The fast-casual spot was originally set to open last summer. Now, the newest location will officially be opening its doors at the corner of Park Road and Mockingbird Lane on Saturday, Sept. 23.

This will be Koibito Poké’s first location in North Carolina — and on the East Coast.

“Our Charlotte location is exciting and important for the growth of Koibito Poké,” co-founder and CEO Todd Stottlemyre said. “It will serve as the training location for our future East Coast stores. The Charlotte team brings an unparalleled level of experience to the brand, and we are thrilled to be introducing our award-winning concept to new markets across the country.”

What to expect

The fast-casual poké spot has a large selection of bases, proteins, toppings, and house-made sauces with vegetarian and vegan options. In addition to build-your-own bowls, here are Koibito Poké’s signature bowls on the menu:

  • Keto Bowl: Cauliflower rice, ahi tuna, salmon, sriracha aioli, cucumber, green onion, Brussels sprouts, kale and sesame seeds.

  • Chicken & Shrimp: Chicken, shrimp, sriracha aioli, champagne butter, cucumber, edamame, red onion, Brussels sprouts, cilantro and crispy onion.

  • Teriyaki Chicken: Grilled chicken, teriyaki sauce, cucumber, edamame, pineapple and sesame seeds.

  • Asian Chicken: Asian chicken, house sauce, cucumber, edamame, pineapple and crispy onions.

  • Koibito Bowl: Salmon, Hawaiian tuna, & ahi tuna, sriracha aioli, cucumber, edamame, cilantro, seaweed salad and sesame seeds.

  • Tuna Trio: Spicy tuna, Hawaiian tuna & ahi tuna, sweet chili lime, cucumber, edamame, red onion, pineapple, sesame seeds and masago.

  • Salmon Bowl: Salmon, house sauce, cucumber, edamame, green onion, ginger, crab mix and sesame seeds.

  • The First Timer: Hawaiian tuna, house sauce, cucumber, edamame, green onion, pineapple, crab mix and sesame seeds.
