Chilean chef takes the helm at Southern restaurant Golden Owl Tavern in Charlotte
Golden Owl Tavern, the Southern-inspired restaurant tucked inside the UNC-Charlotte Marriott Hotel & Conference Center, has a new chef in charge of the kitchen.
Executive Chef Andres Prussing — who was born and raised in Santiago, Chile — brings years of culinary experience to the team at Golden Owl Tavern, which serves dishes including Nashville Hot Deviled Eggs, Farm and Sparrow Cast Iron Cornbread and Smoked Cauliflower Hoppin’ John.
The staples will stay, but some changes are in the works as the restaurant brings back lunch and revamps dishes — including the burger — to incorporate locally sourced produce and global flavors. Also keep a lookout for braised short ribs and a new pasta dish.
“I’m trying to really connect the restaurant with local farmers,” Prussing told CharlotteFive.
Prussing’s grandmother and father inspired his love for cooking as a child in Chile. He graduated from culinary school in 2008 at INACAP in Santiago, receiving a bachelor’s degree in Culinary Arts and Administration before working in kitchens in Chile, Spain and Miami.
He landed in Charlotte in 2013, where he has helped develop food and beverage concepts for hotels including Hilton Charlotte Center and Charlotte Marriott Center City..
“My goal is to bring excitement and diversity to University City. By integrating the freshest ingredients from across North Carolina into our menu and introducing shareable plates and signature dishes, we will create a unique experience for everyone who walks through our door,” Prussing said.
