Soul Miner’s Garden, a popular vegan food truck in the Charlotte area, has opened a brick-and-mortar restaurant and market in Gastonia.

An Instagram post from the restaurant said, “We are proud to invite you in and can’t wait to serve you! We have been working very hard to transform our new space to fit our vision and humbly appreciate your patience, as we are still a work in progress.”

“We will remain in a ‘soft opening’ phase for a few weeks while we build staff and familiarize ourselves with working in a new space. With that said, hours are subject to change at our discretion,” the post said.

The food: Loaded nachos and fries are among the most popular dishes at Soul Miner’s, along with street tacos (soy based carnitas on corn tortillas with onion, cilantro and salsa picante), a Reuben made with fresh portobellos and the BBQ sliders (filled with soy-based Barvecue).

The space: Mood-boosting colors are everywhere at the small cafe — bright red, green, yellow and orange hit you as you walk in the door. You’ll see a homey, eclectic mix of tables and chairs, rather than a polished, pre-packaged look.

How it began: The Soul Miner’s Garden food truck started out just as the COVID-19 pandemic hit and quickly gained a following with visits to Charlotte-area neighborhoods.

Now, owner Sasha Quinn told CharlotteFive that she’s “super happy to bring the first and only 100% vegan restaurant to the Gastonia area and look(s) forward to building a community here, as well as getting to know the good people that live here.”
