The best-known spot to get Chicago deep-dish pizza around Charlotte has closed

Rosati’s Pizza, which has been sharing Chicago-style deep-dish pizza with the Charlotte area since December 2019, has permanently closed its doors.

An April 1 message posted on Instagram said, “It is with a heavy heart that we announce the closing of Rosati’s Waxhaw. We are incredibly grateful for the support, loyalty, and love you’ve shown us over the years.”

It continued: “Serving this amazing community has been an honor we’ll never forget. A special thank you to our incredible staff — your hard work and dedication made Rosati’s a place we were proud to call home. Wishing all of you the very best. Thank you for being part of our story.“

Followers of the restaurant — including James Beard Award semifinalist chef Sam Diminich of Restaurant Constance — expressed their regret for the situation on the closing post.

“I wish this was an April fools joke,” Diminich wrote.

Others mentioned the lack of places to find Chicago-style pizza in the area now that Rosati’s has closed. Round Chicago deep-dish pies have a thick, dense crust that stands up to a heavy load of cheese and toppings.

“That’s so sad. No place to get good Chicago style pizza in this area,” K Wyns said via Instagram.

Even a few weeks later, news is still reaching fans, who have been sharing their sadness elsewhere online, too.

“My Chicago born and bred Father is distraught,” Lawren K W Rideaux posted in the Charlotte Foodies Facebook group, while seeking other options for similar pizza in the area. Several posters mentioned The Crust, which offers a Midwest-style thin crust pizza cut in squares — but deep dish is not among the options.

While the closure of Rosati’s in Waxhaw leaves the Charlotte area without its Chicago-style deep dish, there are other places in North Carolina that you can get a taste.

There’s a Rosati’s location in Morrisville, along with one in Apex. Its location in Cary is listed as temporarily closed.

Rosati’s restaurants serve Chicago-style pizza with a crust that is thinner and crisper than New York-style, with toppings applied more generously than true Italian-style.
