Whether you’re in the mood for sashimi or Peruvian stir-fry steak, a new fusion restaurant is bringing the best of both worlds to Charlotte.

Sushi Rosé, a modern contemporary sushi bar specializing in Japanese and Latin cuisines, is expanding to the Queen City with plans to open in spring 2026, according to an Instagram post.

It will set up shop in uptown Charlotte, occupying the spot that once housed Haymaker, which closed its doors after a final New Year’s Eve dinner in 2024, CharlotteFive reported.

“Get ready for culinary excellence, vibrant vibes, and our signature Japanese-Latin fusion that brings the best of both worlds to your plate,” Sushi Rosé said on Instagram.

The menu features everything from sushi rolls and authentic ceviche to small plates of crudo and edamame. A crowd favorite is its traditional lomo saltado, a Peruvian stir-fry dish made with marinated tenderloin steak, red onions and tomatoes.

There’s also a sushi-fied version of the classic dish — or what co-owner Nevin Anuran describes as “a Japanese-Peruvian version of a surf and turf roll.”

“What we do is we take the stir-fry steak, onions and potatoes and serve it over a plantain-shrimp tempura roll,” he told CharlotteFive. “That is by far what we’re known for.”

The new Charlotte location will have many of the same offerings, with plans to add Argentinian steaks, Brazilian churrasco steak and “bring other true Latin cultures into the mix,” Anuran said.

Sushi Rosé opened its first location in the heart of Winston-Salem a little over a year ago. In that time, it has been crowned Winston-Salem’s best new restaurant, and Anuran said he hopes it has the same impact in Charlotte.

“We fell in love with the architecture of the space,” he said, recalling his first visit to Ascent Uptown. “We decided to take a risk and take it as an opportunity to expand there.”

An official opening date hasn’t been announced, but Anuran said he’s aiming for February at the earliest.

A self-described “big foodie,” the serial entrepreneur said opening a restaurant had long been on his bucket list. The inspiration for Sushi Rosé was sparked during a business trip to Peru, where he dined at Japanese-Peruvian restaurant Maido.

“The Japanese-Latin culture together, as a fusion, just really opened up my eyes and gave me a different perspective on cuisine in general,” Anuran told CharlotteFive.

He’s now bringing his own take on Nikkei cuisine with his cousin, master sushi chef Armin Anuran, at the helm.

“At Sushi Rosé, we take pride in being the premier Japanese Peruvian sushi cocktail lounge in the area,” the restaurant’s website says. “Our menu is a celebration of these rich culinary traditions, carefully crafted to bring out the best of both worlds.”
