A few of your favorite dishes at this Charlotte barbecue spot are going away — for now

Pressed by industrywide challenges including staffing shortages, supply chain issues and high food costs, Mac’s Speed Shop is letting folks in Charlotte know they can expect to see some changes on the menu.

Among the items customers must say goodbye to for now are prep-intensive items such as bacon-wrapped stuffed jalapenos, beef ribs, creamed corn and green bean casserole, Mac’s Hospitality Group President Shang Skipper told CharlotteFive.

“We really tried not to take off people’s favorites but had to evaluate what to take off to make it easier to execute,” he said.

But they might not be gone forever. “You never know where the market’s going,” Skipper said. “If it comes back faster, we’ll go back to normal faster.“

Prices will also increase on chicken wings and brisket, two of the restaurant’s most popular items. Skipper called it a “perfect storm” of circumstances, with worker shortages and supply chain problems. He added that a drought in the Midwest is raising beef prices and there’s not enough poultry workers to meet the demand for chicken.

There’s still a chance you might find yourself in luck if you’re missing your favorite dish, though. Skipper said in a letter to customers: “If any of your old favorites aren’t on the menu, just ask your server if we can make it. If we have the ingredients, we will do our best to make it for you.”

The restaurant has been “adapting daily at this point,” Skipper told CharlotteFive. Other changes have included market-specific hours reductions at some locations, and none are open until 2 a.m., like they used to be. Some also shift to to-go orders only if staffing is short for the day.

Skipper appealed to customers to treat servers and bartenders with kindness as the changes are implemented. “They’re working hard to make sure everyone has a great experience,” he said.
