‘Tacos, queso + coffee.’ LadyBird Taco flies closer to Charlotte debut

LadyBird Taco has its sights set on Charlotte for its next restaurant.

The Nashville-born brand, known for its Texas-style breakfast and lunch tacos, is one step closer to opening the doors on a planned restaurant in Dilworth. A trio of permit requests filed Monday show plans for painted wall signs on the storefront at 1524 East Blvd.

“Graphics will be painted directly onto the exterior building façade and include the text ‘Tacos, Queso, and Coffee,’” one says.

The new restaurant is slated to open in late summer, Brooks Veazey, CEO of LadyBird Taco, told CharlotteFive.

The unique taco chain is the brainchild of founder Gabe Scott, a then-traveling musician on the hunt for the best breakfast tacos in Texas. Years later, Scott teamed up with chefs from that state “to bring that same standard of tacos to the Southeast,” the company said.

Taco lovers can look forward to “house-made tortillas, queso, salsa, and salad from fresh ingredients,” the restaurant’s website says. Hand-crafted coffee, served in partnership with Charlotte’s own Hex Coffee, is also on the menu. Think: espresso, specialty lattes, hot chocolate and more.

“We are eager to begin building community with the neighborhood, and we are pumped to partner with Hex for our coffee!” Veazey said.

LadyBird Taco will occupy the old Lebowski’s Neighborhood Grill, which closed in 2025 after nearly 15 years in business, CharlotteFive previously reported.

The latter was a nod to the 1998 film “The Big Lebowski” and served classic bar bites, including fish and chips and Buffalo wings.

The sign requests come nearly a year after LadyBird Taco first teased plans to bring its unique concept to the Queen City. This will be its first and only North Carolina restaurant, joining existing spots in Alabama and Tennessee.

“What began as a small neighborhood spot has grown into something we (and so many more) really love: a place for good tacos, good coffee, and good people,” the restaurant wrote on Instagram.
